Craig Thompson lives a sweet life. He is a baker that splits his time between Manhattan and The Catskills. The duality of his lifestyle is reflected in the pastries, sweets and baked goods he makes – rustic with an urban sensibility. We visited Craig in his cottage in Shandaken and spent an afternoon with him, discussing food memories, natural surroundings, the slow life versus the fast and how that balance is essential for a healthy life.
